Since his emergence as one of the young prodigies in the world of Burgundy winemaking, Pierre-Yves Colin-Morey has been a force to be reckoned with. In 2005, he made a pivotal decision, leaving behind his family's esteemed Domaine, Marc Colin, where he had already established a solid reputation for producing exceptional white wines.
Taking charge of a share of the family vineyards at the start of the 2006 vintage, Pierre-Yves embarked on a path of independence and innovation. His early vintages showcased his close collaboration with select vineyards and growers, as he meticulously handpicked the finest grapes and acquired the wine as must. To further nurture and develop these exceptional wines, he chose to age them in barrels that he personally supplied.
Beneath his residence in Chassagne Montrachet, Pierre-Yves built his own cold cellar—a testament to his unwavering commitment to quality. Only the wines that meet his exacting standards are granted a place within its hallowed walls. His white wines undergo a meticulous process, starting with whole bunch pressing and fermentation using natural yeasts. These wines are aged on lees for up to 18 months, predominantly in 350-litre barrels. Pierre-Yves abstains from lees stirring and filtration, allowing the pure expression of the grapes to shine through.
Pierre-Yves spares no expense or effort in his pursuit of perfection. The corks used for his village, 1er cru, and Grand cru wines are sourced from a single, small-scale supplier. These extra-long and extra-wide corks (measuring 55mm x 25mm) are untreated with paraffin, ensuring the wines remain pristine. Each bottle is meticulously sealed with soft wax, providing an additional layer of protection against premature oxidation.
