Since 2008, he has embarked on a unique approach, vinifying his wines using whole clusters of grapes, harnessing the noble bitterness of the stems to impart refinement and elegance to his esteemed pinot noir creations.
The wines of Domaine Duband have secured their place among the finest establishments, gracing the wine lists of 16 out of the 25 prestigious three Michelin-starred restaurants in France. Enthusiastic about catering to their loyal patrons, Domaine Duband established the Duband Wine Club in 2014. When David Duband joined his father Pierre at the helm of the family domaine, the estate encompassed 15 hectares of vines in Chevannes, nestled in the heart of the Hautes-Côtes de Nuits, and an additional 5 hectares in Nuits St Georges. Initially, the grapes were sold to the local cooperative, and the domaine focused solely on viticulture.
In 1991, armed with his oenology diploma from the esteemed school in Beaune, David Duband seized the opportunity to vinify his inaugural vintage. Eager to test and experiment with different vinification techniques, this talented and enterprising spirit drew inspiration from his father's vineyard work, sought expert advice from his mentor Robert Jayer in Magny-les-Villers, and absorbed invaluable knowledge during internships at the esteemed Domaines Arlaud and Pierre Amiot in Morey-Saint-Denis.
However, it was the profound admiration for the wines of Burgundy and the remarkable accomplishments of Domaine Dujac in Morey-Saint-Denis and Armand Rousseau in Gevrey-Chambertin that profoundly influenced and guided David Duband's vinification choices.
