Since 1996, the production of DOC wines using pure Sangiovese grapes has been possible, while in 2006, Chianti Classico started being exclusively produced with red grape varieties.

These include native Tuscan varieties such as Canaiolo Nero, Ciliegiolo, Colorino, Fogliatonda, Malvasia Nera, Mammolo, and Pugnitello, as well as renowned international varieties like Cabernet Franc, Cabernet Sauvignon, Merlot, and Syrah. All selected grapes must be recorded in the national register of vine varieties of MIPAAF authorized by the Region of Tuscany.
