Gevrey Chambertin stands as the northernmost gem among the esteemed communes gracing the expanse of Côte de Nuits. This particular wine emanates from vineyards adjacent to the illustrious Premier Cru 'Fonteny,' nestled in proximity to the charming village of Gevrey-Chambertin.
Dedicated to sustainable agriculture, the cultivation of these cherished Old Vines is a testament to the craft's longevity. The grapes are handpicked, subject to rigorous sorting both within the vineyard and upon arrival at the winery. A careful destemming process ensues, followed by a meticulous fermentation that extends for a span of 15 days within stainless steel tanks. The gentle orchestration of the process eschews vigorous punch-downs, opting instead for a daily ritual of gentle pump-overs, nurturing the transformation until fermentation's crescendo.
An interlude of 12 months ensues within oak vessels, a quarter of which are graced with the novelty of new barrels. As the journey concludes, the wine is bottled in its purest form, unfiltered and uncompromised—a testament to the essence of the terroir and the dedication of its creation.
