Sourced from the picturesque Vinci region near Empoli, our grapes hail from a vineyard with approximately 12 years of age, benefiting from an ideal south-west facing orientation to capture the sun's warmth. Our winemaking process is a testament to precision and innovation, featuring two distinctive ferments.
One batch undergoes a 100% whole bunch fermentation, embracing the art of carbonic maceration, while the other consists of 100% de-stemmed fruit. The magic unfolds over 8 days, as the grapes gently rest on their skins, extracting depth and character. After this careful maceration, the wine is pressed into cement vats for malolactic fermentation, a crucial step that imparts refinement and complexity. Here, it gracefully matures for a minimum of 8 additional months before it's finally ready for bottling.
