Artisan Yarra Valley sparkling from our Lusatia Park vineyard. Hand disgorged, zero dosage, slightly wild. Serious, edgy premium sparkling wine.
Fruit is whole bunch pressed directly to cask. The base wines undergo natural fermentation in older casks, full malolactic fermentation and sit on lees until spring. The cuvée is assembled from the two varietal components and tiraged for secondary bottle fermentation. The wine is left to ferment and age on lees for 6 years before hand riddling, disgorging, corking and finishing.
100% barrel fermented using wild yeasts, full malolactic fermentation, secondary fermentation in bottle, hand riddled, zero dosage.
66% Yarra Valley Pinot Noir, 34% Yarra Valley Chardonnay
