Domaine Daniel-Etienne Defaix Chablis Vielles Vignes 2020

From vines up to 130 years of age. A return to a more classic expression of this cuvée after the oxidatively handled, Jura-esque 2019 – flint, crème frâiche, fennel bulb on the nose. Great concentration this release, dripping with brine and oyster shell, around more fresh fennel, green apple and pear, rounding out with citrus spectrum flavours. Well composed with more intensity than standard AC Chablis.
