At Domaine de l’Enclos, every wine bears the mark of organic certification, reflecting a commitment to sustainability and purity. Embracing a minimalist ethos in the cellar, the wines are crafted with respect for nature—ambient yeasts and minimal intervention, with only a delicate touch of sulfur added at bottling. This dedication to authenticity yields wines of exceptional character, echoing the essence of Chablis' storied terroir with every sip.
More than 15 hectares of vineyards around the villages of Chablis, La Chapelle and Beine form the basis for this Chablis. The soils are chalky with Kimmerdige and Portlandian limestone and the grapes are harvested by hand. After the harvest, the grapes are pressed directly and the must is fermented spontaneously in stainless steel fermenters. The Chablis is matured in classic perennial wooden barrels. After ageing, the wine is lightly filtered and sulphurised.
