Located on the Côte des Vaillons, this appellation has 8 distinct « lieux dits ». With a soil base of more limestone than clay, sitting on hard, compact Portlandian limestone, it represents all the different types of Chablis terroir under one appellation.

Review

Derived from old vines in Les Minots (that are a source for the Fèvre massale selection), as well as holdings in Roncières and Chatains, the 2020 Chablis 1er Cru Vaillons unwinds in the glass with notes of white flowers, crisp stone fruit, and clear honey. Medium to full-bodied, satiny, and enveloping, it's a beautifully vibrant, racy wine that concludes with a long, penetrating finish. It's the best young Vaillons I've ever tasted chez Fèvre.

Tasting Profile

palate

Pronounced nose of fruit and flowers, with lovely freshness and a few mineral touches. A generous palate, with lovely roundness. Maturing 13 to 14 months, of which 5 to 6 months on fine lees in French oak barrels, for 40 to 50% of the harvest. The end of maturation occurs in small stainless steel vats.
