Crafted with utmost care and finesse, the Gamay grapes embarked on a remarkable journey, grafted onto the venerable own-rooted cabernet vines, originally planted in 1999. In the embrace of our distinguished vineyard, the soil reveals its character – a rich tapestry of black-cracking clay soil adorned with a captivating mosaic of submerged volcanic pebbles and boulders at one end, while at the other, a more crumbly and slightly more vibrant chocolate-colored soil awaits. This enchanting blend of terroir elements set the stage for a transformation that bore its first fruits during the abundant 2014 vintage.
The grapes, chosen with a discerning eye, are tenderly hand-picked and meticulously sorted amidst the very vines that nurtured them. They embark on their vinous voyage as whole clusters, gracing the fermentation tank. Here, within the sanctum of natural fermentation, they unfurl their essence over a mesmerizing span of 10 days, unveiling the delicate symphony of carbonic fruit aromas. The zenith of this winemaking choreography features the gentle foot stomping of the grapes, followed by pressing on days 11 and 12. Subsequently, the nascent elixir finds solace in the embrace of well-seasoned five-year-old barrels, where the final notes of fermentation are tenderly composed. This symphony of flavors matures and evolves over eight months, culminating in the creation of a wine that encapsulates the very soul of its terroir.
