Louis Jadot Corton Greves Grand Cru 2021
The Grand Cru is a powerful wine with a structure similar to Côte de Nuits wines. The vineyard orientation allows to elaborate a wine with silky tannins and harmonious acidity. Les Grèves is a South east exposure vineyard based on a siliceous soil. This gives power and delicacy to the wine. The harvest is manual in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and then destemmed. The grapes are macerated in open wooden or stainless steel vats for 3 to 4 weeks. The vats are punched twice a day during fermentation.
Grilled salmon pairs well with Pinot Noir, complementing its delicate fruitiness and balanced acidity.
In the aromatic profile, earthier and more sauvage-inflected notes intertwine with ripe red and dark berry aromas, where the presence of ample, yet subtly integrated, oak and menthol influences add depth and complexity.
On the palate, the wine unfolds with succulent, round, and fleshy characteristics, showcasing a big-bodied nature. The flavors exude both ripeness and evident muscle, culminating in a powerful finish. While less mineral-driven, the conclusion is defined by a firm tannic spine, emphasizing the wine's structure and ensuring a compelling and robust experience, emphasizing the necessity for patience in its appreciation and aging.
