Onannon embodies the collaborative effort of a trio of close friends: Sam Middleton and Kaspar Hermann, both hailing from Mount Mary, and Will Byron, proudly representing Stonier. Their craftsmanship is showcased through this exquisite 100% 95 clone Chardonnay, sourced meticulously from a singular Tuerong site. The journey begins with the delicate crushing of the fruit, followed by an overnight settling, and the subsequent transfer to oak barrels.
The Onannon team's expertise shines as they artfully experiment with varying levels of solids and a medley of yeasts, masterfully enhancing the wine's complexity. Notably, no malolactic fermentation is employed. Aged for 10 months in barrels, with 20% being new French oak, the result is a Chardonnay with an enticing nose reminiscent of smoky grilled hazelnuts, succulent nectarine, and a hint of ghee.
Upon tasting, it reveals a remarkably crisp and pure initial impression, akin to a refreshing soda, underscored by a subtle mineral undertone. This vintage showcases a heightened delicacy compared to its 2016 counterpart, expertly integrating the oak elements. The grand finale is marked by a pristine, chewy savouriness that lingers vivaciously, leaving a lasting and memorable impression.
