When Dr Peter McMahon planted the first vines at Seville Estate in 1972, it marked the rebirth of the Yarra Valley as a premium wine region. By the end of the decade, Dr McMahon and his wife Margaret were producing wines that served to restore the well-established reputation the Yarra had enjoyed in the 19th century. Surprisingly in a region more renowned for its red wines produced from Cabernet and Pinot Noir, it was the Seville Estate Shiraz that received the most attention, quickly becoming one of Victoria’s most sought-after wines.

Peter and Margaret’s grandson, Dylan McMahon joined Seville Estate in 2000, and became the chief winemaker in 2004, following the passion ignited a generation before. The Reserve range is estate grown and made, expressing the very best wines from vintage and only released in exceptional years. The reserve wines are only produced in small quantities with fruit mainly sourced from our 1972 plantings. The wines are designed to have extended cellaring potential.

"Precision, line, length, focus - all or any of the foregoing are the starting point for a wine with a magic key to unlock the otherwise clash between Upper Yarra red soil needing warmth to ripen cabernet and a cool vintage. This is a lovely cabernet with the flavour wheel tracing all the savoury flavours (alongside cassis)."

Review

Fabulous, graceful Cabernet Sauvignon. Redcurrant, raspberry, flowers, aniseed, tobacco earthiness packed deep into a medium-bodied frame. Acidity is pure and fresh, tannin is light but sure, it feels ‘minerally’, and the length is terrific. In short, it’s Yarra Cabernet wearing its best suit (or dress).

nose

The colour is dark red with youthful purple tints evident. Perfumed with dark cherry, cocoa, and spice, subtle oak sweetness adds lift and complexity.

palate

The palate is finely structured with ripe dusty tannins and red berry fruits. A tobacco savouriness that adds depth and complexity while the acid maintains freshness and adds brightness to the wine. A complex layered Cabernet that will award medium to long-term aging.
