What an epic Southern Margaret River vintage! A cool autumn followed by a warm summer accelerated the ripening of all of our premium whites. March saw a refreshing coolness that accentuated the delicate flavours of the Pinot Gris harvest. Perfection! A small batch wine. 50% high solids ferment in old oak barrels to provide texture and weight and 50% low solids tank ferment to give perfume and lift. Adventurous, creative, exotic and explorative hand-crafted wine.
Chicken, fish (especially Salmon), pork tenderloin, quiche, shellfish like clams, oysters and mussels, and finally, veal.
Pinot Gris or Grigio, call it what you like. A small batch, wild ferment wine brimming with pear and orange blossom backed by hints of musk and a savoury nuttiness. A salivating palate of pear, lychee, mandarin and fresh limes.
