Introducing our latest creation from the esteemed Yarra Valley, behold our meticulously crafted Pinot Noir, hailing from the prestigious Warramate vineyard nestled at elevations of 160 to 180 meters. This wine embodies the essence of its terroir, reflecting the unique characteristics of the region.
Our vines, carefully cultivated on silty clay loam over yellow clay soils, comprise a harmonious blend of three exceptional Pinot clones: 55% MV6, 35% Pommard, and 10% Abel. Each clone adds its distinctive flair, contributing to the complexity and depth of our wine.
In the art of winemaking, we employ a delicate touch, utilizing a range of small fermenters with varying percentages of whole bunch fermentation, from none to 100%, to impart layers of flavor and elevate the bouquet. Hand plunged and gently pressed, our wine undergoes malolactic fermentation in the cool confines of our underground cellar before being gracefully transferred to a selection of 300L hogsheads and 228L barriques for maturation.
The result is a wine of profound depth and elegance, characterized by dark fruited notes of blue and black cherries, accented by subtle hints of aniseed spice and a delicate stalk fragrance. Medium-weighted and silky on the palate, our Pinot Noir exudes a refined fruit purity, with judicious use of seasoned oak, including a subtle infusion of 10% new French oak, enhancing its structural integrity while preserving its inherent elegance.
