One of the greatest Domaines in Chablis. Founded by William Fevre in 1957 and its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The Domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the Domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.
Domaine wine with 50-year-old vines from a number of vineyards, including north-facing plots underneath Les Lys, northwest-facing opposite Vaillons, and south-facing around Troesmes, plus some mineral soils from around Chichée. Intense and driven, you can smell the Kimmeridgian. Great energy and focus. Spice on the finish, and precise acidity. Will age for many years. Bottled just before the 2021 harvest. Drink 2022 - 2026
An expressive and airy nose reflects notes of mineral reduction, green fruit, and plenty of citrus influence. There is slightly better density and a more attractive texture to the delicious flavours that flash good minerality on the dry, balanced, and moderately firm finish.
