In mid-October, meticulous hand-harvesting of the grapes commences, with each delicate cluster carefully cradled in perforated baskets to ensure pristine condition during transportation to the cellar. Here, the dedication to quality continues, with a targeted grape yield of 80 quintals per hectare.
The alchemy of transformation unfolds within state-of-the-art, thermoregulated stainless steel tanks, where fermentation takes place at a precisely maintained 28°C. This intensive process involves daily pumping over for a duration of 15-20 days, extracting the essence of the grapes with unwavering precision.
The journey then progresses to a period of maturation in new 25-hectolitre oak barrels, where the wine rests for a patient three-year sojourn. Here, it evolves, absorbing the subtle nuances of wood and time. Crucially, our wine remains unfiltered, embracing its innate purity and character. This dedication to uncompromising quality extends to the bottle, where it continues to mature and evolve, promising an exceptional sensory experience that endures over time.
Meat and game aged cheeses
Barolo Serralunga has a beautiful, intense ruby colour with garnet reflections and a complex and persuasive nose with touches of overripe fruit and spices. In the mouth it manages to admirably combine the sumptuous richness of its structure with a surprisingly easy drinkability; the finish is long and commensurate, just warmed by excellent alcoholic strength, the glycerine persuasiveness of its expression is a fleshy sour cherry, with a sweet, intensely minty nose.
