The alchemy of transformation unfolds within state-of-the-art, thermoregulated stainless steel tanks, where fermentation takes place at a precisely maintained 28°C. This intensive process involves daily pumping over for a duration of 15-20 days, extracting the essence of the grapes with unwavering precision.
The journey then progresses to a period of maturation in new 25-hectolitre oak barrels, where the wine rests for a patient three-year sojourn.
