The vineyards are near Sambuca di Sicilia and are 15 years old. They surround Lago Arancio (Lake Arancio) which was once a river forming a valley. The soil profiles are quite deep towards the lake and composed of ancient marine fossils. The vineyards are North facing meaning a cooler exposition. Afternoon sea breezes from the South-West provide further essential cooling.
Fruit is destemmed and fermented in small one-tonne fermenters. Fruit remains on skins for 10 days before pressing to 2000-litre French oak casks.
