This wine itself is an unorthodox blend of Corvina, Cabernet & Merlot. Fermented cool and slowly in two stages before settling in stainless steel and a couple months in Slavonian oak.
The Farina Apassilento Rosso offers a fragrant nose of red and black fruits, floral tones, and spice. The body is full, with lovely structure, and the fruit characters are intense in the mouth, supported by vibrant acidity and round tannins. The long maceration of the grape skins gives the wine a rich and full flavour, while still being quite soft and approachable.
The name "Appassilento" is a play on words of "appassimento", the technique of drying grapes before fermentation to concentrate their sugars, and the Italian word "lento", meaning slow, with the fermentation taking a long time at a cool temperature, and the wine resting on its lees before bottling.
