Despite below-average yields, the slow ripening process carried into Autumn, ensuring the preservation of the high-quality wines for which the area is renowned.
For the Adelaide Hills Sauvignon Blanc, the harvest involved the early morning machine picking of the fruit. Subsequently, the grapes were gently crushed and pressed to preserve the fresh and vibrant flavors. The clarified juice underwent fermentation with two aromatic yeast strains, enhancing the distinctive varietal characteristics of Adelaide Hills Sauvignon Blanc.
