2021 is a sensational vintage in these parts. The wines are intensely flavored, buoyant of fruit and with rapier-like freshness. Scents of creamed cashew, nougat and a whiff, too, of praline. White peach and nectarine across the mid-palate, framed by a gentle rasp of well executed phenolics. The finish, latent and forceful as it creeps across the gently medium-bodied palate before a full flourish at closing. Very good New World chardonnay. In summation, this offering unquestionably epitomizes the excellence of New World chardonnay, delivering an exceptional representation of the vintage's prowess and the winemaker's artistry.
Since the first vintage in 1976, Seville Estate has cemented its position as one of Australia’s premium wineries, consistently receiving widespread acclaim and many prestigious awards, both in Australia and internationally. Seville Estate wines are made with minimum intervention, with the varietal and site expression in mind. Winemaking techniques are delicate and labor-intensive based around showcasing the true fruit characters, not artefact. All our Estate wines are fermented using indigenous yeasts.
Comes from Seville Estate's coolest site; south facing on the deep, red basalt soils. Whole-bunch pressed and barrel fermented in French puncheons (30% new). A deepish, bright green gold. A superb Yarra chardonnay - power without weight. Lemon oil, melon, spices, a nougat nuttiness and ginger. A rich, complex, yet focussed and structured mouthful, becoming fleshier and more open the longer it sits in the glass. Worth decanting or giving it some air in the glass, but know that this will continue to improve and become more complex in the bottle over the next 5-10 years.
