Hand harvested fruit was carefully sorted and destemmed with 100% whole berries going into small open fermenters. Natural fermentation occurred with daily hand pump overs and limited plunging to extract fine tannins and flavour. After two weeks on skins the wine was pressed then racked into new (30%) and used French Hogs Heads, where it rested and grew. The wine was then blended and filtered prior to bottling in February 2022.
While still tightly wound, it will unfurl with more time in bottle (otherwise it's worth decanting to maximise the pleasure). Heady aromas of cherries and spice, warm earth and licorice with woodsy spices and a cooling dash of menthol. Juicy and tangy, with ripe yet restrained tannins and plenty of acidity keeping this in check. A terrific drink.
The Macedon Ranges is one of Australia’s leading regions for Pinot Noir thanks to it being one of the coolest locations on the mainland, with this example beautifully showcasing the region’s fine and detailed style. Pretty in the glass and aromatically as well thanks to perfumed cranberry, spice, floral and forest floor aromas with good volume and intensity. The velvety palate is then underpinned by a fresh but balanced acidity supporting flavours of damp earth, dark cherry and spice that linger over a sustained finish. Hard to keep your hands off now but you know it is going to reach a better place over the next three to five years.
