Bottle 1: Bollinger Cuvée Champagne NV - (Champagne, France)
Disgorged in the second half of 2019, the latest release of Bollinger's NV Brut Special Cuvée is based on the 2015 vintage, complemented by around 60% reserve wines. A blend of 60% Pinot Noir, 25% Chardonnay, and 15% Meunier. The wine is still quite tightly wound after its recent disgorgement, opening in the glass with notes of crisp yellow orchard fruit, freshly baked bread, clear honey and orange peel, with little sign of the nuttiness to come with bottle age. On the palate, it's medium to full-bodied, muscular and incipiently textural, with a deep core, ripe acids and a pinpoint mousse. The Bollinger style: depth and subtlety. A majority of reserve wines, part of which have been aged in magnums for 5 to 15 years.
Bottle 2: Henschke Five Shillings Shiraz 2022 - (Barossa Valley, Australia)
Five Shillings pays tribute to Paul Gotthard, the second-generation Henschke winemaker of the early Barossa Lutheran pioneers of South Australia. In 1862 he and his pioneering father Johann Christian established the Henschke winery in the high country of the historic Eden Valley, planted seven acres of vines, and in 1868 sold the first wines. In 1873, after a transfer of five shillings, he continued on the winemaking tradition from his father and began to build a reputation for quality wines. Among the first wines, they produced in the 1860s were ‘dry white’ (likely made from riesling) and ‘dry red’ (likely made from Shiraz and Mataro). This wine replicates the blend of Gotthard's early ‘dry reds’ and is produced from low-yielding, ungrafted, biodynamically grown Eden Valley shiraz planted on 540 million-year-old red-brown earths, and blended with Mataro growing on the sandy soils of the Barossa Valley.
Bottle 3: Reserve Chardonnay 2020 - (South Australia, Australia)
Introducing a masterpiece from Wrattonbully, South Australia – our premium Burgundian-style Chardonnay, meticulously crafted to perfection. This exquisite wine is the result of unparalleled dedication. It undergoes both primary and malolactic (100%) fermentation in the finest Louis Latour 3-year-seasoned 228-liter barriques, featuring a composition of 15% new, 30% second use, 30% third use, and 25% François Frère 3rd use and older barrels. It matures for a luxurious 11 months in barrel before reaching the bottle.
