Hand harvested, the Cabernet is berry sorted and the Malbec is bunch sorted. The Cabernet is destemmed, berry sorted and then crushed into the half-tonne open fermenters. A small amount of Cabernet (5%) was whole bunch fermented to bring extra lift and perfume to the wine. Malbec is destemmed to the small fermenters and hand plunged twice daily. Maturation in French Bordeaux-shaped barrels; only 15% new oak to enhance the juicy fruit palate and immediate enjoyment. Blending immediately before bottling.
75/25% cabernet/malbec. Mainly berry sorted and destemmed with a small amount of whole bunches. Matured in French Bordeaux-style barriques (15% new). A deep crimson red. Fragrant with darker red fruits, freshly hung meat and a lifted floral, herbal character from the malbec. An open, confident, bright and quite delicious Yarra cabernet.
