Crafted with care, our wine is fermented in half-tonne fermenters and hand-plunged twice daily, ensuring optimal extraction of flavors and tannins. A portion of our Cabernet component matures in a brand-new 3500L upright oak cask, spending eight weeks on skins to develop complexity and savory notes. All varietals mature gracefully in French oak, with 40% new oak infusion, culminating in a harmonious blend after 15 months of barrel maturation.
