Our unwavering commitment with the Langhe Nebbiolo centers around harnessing the purest aromatic essence. This all begins in our vineyards, where we carefully select grapes from our youthful vines nestled in Barolo, Novello, Sinio, and Bricco Bertone. The harvest unfolds during the tranquil early morning hours, capturing the very soul of these grapes.
To ensure the retention of vibrancy and tension in this wine, our vinification process is a labor of patience and gentleness. Nebbiolo typically reaches its peak ripeness between the latter half of September and early October. Our picking decisions are deeply individual, respecting the unique character of each site. At times, we opt for multiple harvest passes to honor the diverse nature of each vine.
The journey continues with fermentation, which takes place in vertical vats, stretching over an average of 15-20 days. This process is then followed by spontaneous malolactic conversion. The aging of our Langhe Nebbiolo spans a range of 8 to 14 months, a span that flexes to honor the distinctive character of each vintage, allowing us to patiently await the optimal moment for bottling.
Throughout this journey, the majority of aging occurs within stainless-steel vats, with only a small fraction of the wine finding its way into neutral oak—only when deemed necessary. Our approach harmoniously marries tradition and innovation, ensuring that each bottle carries the signature essence of its unique terroir and vintage.
