The largest vineyard owners in the Cote des Blancs, Champagne de Saint-Gall is the creation of the Cooperative Union Champagne, founded in 1966, which consists of growers who only hold Premier & Grand Cru Vineyards. Produced from a blend of 64% Chardonnay and 36% Pinot Noir.
A buoyant and fluffy mousse holds well over a pale straw coloured base that has flecks of gold around the edges. A very fine bead showing good persistence. Excellent aromatics with baked bread, citrus and yeast lees leading the way. Subtle toast and almond notes ensue. Well meshed flavours of yeast lees, baked bread and citrus overlay an oily toast and almond back drop. Airy feel with good tension, crisp acidity and a refreshingly savoury aftertaste.
