Domaine Daniel-Etienne Defaix is a highly respected Chablis producer offering what are effectively natural wines, other than a small addition of sulphur. The 2012 is remarkably youthful, bursting with minerality stone fruits. Daniel-Etienne commercializes his wines in an unusual way. He works about 15 years behind the vintage date in release.
