Established in the year 1940 under its former name, Coche-Bizouard, the esteemed Domaine Fabien Coche is dedicated to cultivating the exceptional qualities found in Burgundy's finest wines. Employing time-honoured techniques, the Domaine Fabien Coche meticulously attends to every aspect of the winemaking process, from tending to the vineyards to bottling, ensuring the creation of truly remarkable vintages.
Derived from seven meticulously chosen vineyard parcels, strategically located in the picturesque region of Meursault, just below the charming village, this particular wine undergoes a distinctive production process. It begins with the gentle pressing of whole grape clusters and matures in a 3000-litre foudre before being transferred to stainless steel tanks for an additional six months. After a total of 16 months spent on lees, the wine is bottled without undergoing fining or filtration in January.
Thus, it is evident that this Bourgogne blanc transcends the ordinary expectations associated with its humble appellation, exhibiting remarkable depth, texture, and character. It effortlessly delivers a delightful freshness accompanied by captivating Chardonnay flavours, while also revealing an intricate and refined complexity.
