As such, we chose to begin picking very early, which is to say on the 22nd of August. This date was between 90 to 95 days after the middle of the flowering, depending on the sector in question. The harvest conditions were, consistent with the growing season in general, also hot and dry so we picked as quickly as we could.
More elegant aromas are comprised of mineral reduction, cool floral, white orchard fruit, quinine, and saltwater. The delicious middle-weight flavours somewhat surprisingly possess better volume if less power on the sappy, lingering, and well-balanced finale. The 2020 Chablis Blanchot Grand Cru has a much more expressive nose than the Bougros at this stage, offering lifted lime flower and orange blossom scents, though perhaps there is less mineralité at the moment. The palate is well-balanced with fine acidity, showing just a little creaminess. Almond and chamomile notes appear toward the finish. Give these 3 – 4 years in bottle.
