Seville Estate wines are made with minimum intervention, with the varietal and site expression in mind. Winemaking techniques are delicate and labour-intensive based around showcasing the true fruit characters, not artefact. All their Estate wines are fermented using indigenous yeasts. Seville Estate is situated at the beginning of the Upper Yarra Valley at an elevation of over 200 meters. Their 10-hectare vineyard with a predominant southeast aspect protects our grapes from the hot north winds of summer. This along with an average rainfall of 750mm allowed their vines to ripen their fruit slowly providing maximum flavors.
A delectably smooth wine, exhibiting a harmonious blend where the absence of new oak influence gracefully complements its inviting nature. Subtle notes of dark fruits intertwine with an array of robust spices, ranging from pepper and licorice root to juniper berries and dried herbs. Its profile carries an earthy undertone, accompanied by a subtle infusion of soy sauce and lingering umami nuances. The palate presents a lighter framework, while the tannins offer a refined texture reminiscent of sandpaper.
Vines planted '96, identical vinification to its Old Vine Reserve sibling except 65% whole berry/35% whole bunch. Bright colour; juicy mouthfeel with red cherries/berries dominant; savoury nuances in the shadows of the finish. Lovely wine.
A savoury and soft wine that has meshed well with no new oak flavour to get in the way of its approachability. Dark fruits but not much, lots of spices from pepper, licorice root, juniper berries to dried herbs. It's earthy, with a splash of soy sauce and umami flavours throughout. The palate is lighter framed although the tannins have some sandpaper texture.
