Carefully selected from low-yielding vines on our picturesque 300-acre estate in the elevated, cool-climate region of Oakbank, these grapes underwent a meticulous journey. Harvested by hand, they were then delicately chilled for 24-48 hours prior to embarking on a unique winemaking process.
Our winemakers employed a partial whole-bunch, whole-berry ferment, allowing the magic of wild yeast to unfold. Following this, an extended maceration and a patient maturation period of 10 months took place in exclusive 100% French Oak barrels. The result is a wine that captures the essence of its origin.
This exquisite creation reveals a bouquet of intricate aromas, dominated by the luscious notes of strawberries and cream, complemented by subtle hints of forest floor. The palate is a seamless tapestry of elegance, showcasing vibrant red fruits intertwined with alluring gamey characters, layered over nuances of mushroom and fresh herbs.
