The name “Tapanappa” is inspired by the 550-million-year-old geological formation that underlies the Fleurieu Peninsula where the Croser family have a coastal property and their newest vineyard, Foggy Hill. The word Tapanappa is derived from the local aboriginal language, implying “sticking to the path”. This is exactly the philosophy Brian Croser has employed in selecting his Distinguished Sites matching the climate, soil, and geology of a location to the right varieties and fastidiously managing the vineyard to make unique Australian “terroir” driven wines.
Definitus is an apotheosis on the Tapanappa Foggy Hill Pinot Noir journey. After 14 years of careful observation across the 3 Pinot Noir clones on 4 rootstocks, planted across the 4- hectare Foggy Hill Vineyard at Parawa on the Fleurieu Peninsula in South Australia, a one[1]hectare strip of the vineyard has been observed to consistently produce the most complete wine. Since 2017 the DEFINITUS strip has been harvested separately from the rest of the vineyard.
This is smoky and savoury, scented with dried herbs and dried flowers like the regular Foggy Hill, but with a little more density, flesh, and concentration. Very savoury and quite delicious, the finish long and harmonious.
