Our journey begins with the meticulous hand-harvesting of our grapes, a labor of love that sets the stage for excellence. These carefully selected grapes are then gently cooled overnight, preparing them for a delicate whole bunch pressing, yielding exceptionally high-quality juice.
In pursuit of perfection, the juice embarks on a transformative journey within French oak barrels. This orchestra of flavors unfolds within a symphony of barrels, including 228 L barriques and 500 L puncheons, of which 30% are freshly introduced, infusing the wine with a harmonious blend of flavors. To enhance complexity and intrigue, we allow both wild and cultured yeasts to conduct the fermentation, imparting a nuanced hint of wet stone.
To maintain the wine's inherent natural acidity, we deliberately halt the malolactic fermentation, preserving its vibrancy and character. For a grand total of 10 months, this masterpiece matures in the serene, subterranean depths of our cellar before culminating in a seamless blend, bottled for your pleasure.
This Chardonnay vines include the two venerable blocks, originally planted in 1969 (their clone remains a mystery) and contemporary clonal selections 95 and 548.
As this wine emerges in its youth, it may appear somewhat reserved, but with the gentle passage of time, it will evolve into a more robust and layered expression. With careful cellaring, it has the potential to flourish for up to a decade.
Oyster shells, wet rocks, sea spray and orchard fruits. Finesse combine with pillowy fruit weight; this is a wine that has weight and texture coupled with a green apple crunch. An energy drives the palate with a pithy interest and a slippery texture on the back palate the gives ample weight and extraordinary carry. The fruit is supported by an extremely fine-grained oak tannin framework which lingers on the finish.
