This parcel has long been recognized for the quality of its grapes and is valued by Ceretto as a precious Cru of the region. To fully capture the aromatic richness and expressive maturity of the grapes in the glass, a vinification process solely in steel was chosen, enhancing the Dolcetto's varietal characteristics without interference. Fermentation takes place in temperature-controlled steel tanks, with a relatively short maceration on the skins to avoid extracting excessive tannins. The wine then rests in steel for several months before being bottled.
