Meticulously hand-sorted, the grapes undergo a whole bunch pressing in a combination of French oak and stainless steel (10%). Following a spontaneous, wild yeast fermentation, the wine matures for a harmonious 10 months in French oak barrels, with 26% of them being new. Bottled without filtration or fining, this Chardonnay captures the essence of its terroir.
