This wine gets its name from who looks after the vineyards, who carefully selects the grapes, who produces the wine in the winery and who for years has had an enormous passion for the sparkling wine world, and who in 2011 decided to start this new experience using his own grapes to make a Metodo Classico, after years of experience of making important red wines such as Barolo, Nebbiolo and Barbera… Matteo Giribaldi.
The wine is a blend of 60% Pinot Nero (Pinot Noir) and 40% Chardonnay. The pas dosé (zero sugar) represents the purest essence of bubbles and the most authentic expression of Giribaldi terroir.
Once fermentation is complete (in steel), the base wine will be stored on the fine lees with frequent batonnage until the following spring, when the second fermentation will be carried out according to the Classic Method for 82 months.
Radiant and loaded with finesse, this has aromas of ripe white stone fruit, brioche and lemon zest. The aromas carry on to the racy, bone-dry palate along with mineral notes suggesting saline and briny oyster shell. A lively, elegant perlage and crisp acidity provide the energized setting.
