William Fèvre is one of Chablis’ greatest wine Domaines, created by the eponymous William Fèvre between 1957 and his retirement in 1998 when he sold to the Champagne House Joseph Henriot. William Fèvre began with just 7 hectares and over time, increased this to 48 hectares, planting widely in the best of the 1ers and grand crus where the vineyards had fallen by the wayside.
Brilliant pale straw colour with a greenish tinge around the outskirts and a watery hue. The nose displays aromas of pear and citrus which sit alongside some lime notes overlaying stony mineral. The palate shows good freshness with flavours of citrus, pear and limes melding into some stony characters with a dry mineral infused finish and bracing acidity. Fresh slatey mouthfeel with an aftertaste of pears, lime, stony characters and mineral.
