Crafted with meticulous attention to detail, our Cabernet Sauvignon grapes are hand-harvested, destemmed, and individually berry sorted before gently crushed into our Yarra Yering 600kg open fermenters. Hand-plunged twice daily, the wine undergoes fermentation until complete, with some extended time on skins to ensure the tannins soften to perfection. Maturation takes place in French oak Bordeaux-shaped barrels, with 40% new oak, over 15 months, culminating in a wine of exceptional quality and depth.
